We aren’t just cutting meat; we are stewards of a traditional craft. As a USDA-inspected processing facility and a nose-to-tail butcher shop, our mission is to uphold the integrity of the meat industry from the farm to the table.

We believe in transparency, the highest standards of animal welfare, and the art of utilizing the whole animal. We are looking for dedicated individuals who want to master the “old school” way of butchery and grow with a team that values quality over speed.

We provide a comprehensive education in the trade. Whether you are starting your journey or looking to refine your expertise, you will gain hands-on experience in:

• Ethical Processing: Mastering the art of humane slaughtering.
• Whole-Animal Utilization: Full carcass breakdown, including primals, retail cuts, wholesale, and custom-style butchery.
• Charcuterie & Craft: Specialty sausage making, dry aging, and traditional curing techniques.
• The Business of Butchery: Merchandising, sales, and the fundamentals of shop management.
• Safety & Standards: Rigorous training in food safety and USDA regulations.
