Harv’s Butcher Shop

Our three BEEF packages are Bronze, Silver, and Gold.

Bronze

The Bronze package is our fresh pork package. The entire pig remains uncured. Butchered in a classic “custom cut” style that consists of a balanced mix of bone in roasts and steaks. Ground pork is unseasoned. Carcass is dry aged for ≥ 1 day.

Silver

The Silver package is our cured pork package. Hams, hocks, and bacon are cured. It is a combination custom/retail style package, great for a customer who would like more boneless cuts. Includes 25 lbs. of seasoned ground sausage. Carcass is dry aged for ≥ 3 days with regards to carcass quality.

Gold

The Gold package is our premium retail style package. Hams, hocks, and bacon are cured and smoked. It contains the most boneless cuts and highlights the unique characteristics of individual muscle groups. Roasts are netted or tied for uniformity. Includes 50 lbs. of seasoned ground pork, with 2 choices of seasoning. Carcass is dry aged for ≥ 5 days with regards to carcass quality.
